When deciding on which origin of chocolate for our Fleur de Sel, it was rather obvious that we would choose the Dominican 70%. It has a beautiful sweetness that reminds us of caramel and honey, and the light sprinkle of salt brings a delicious contrast to the chocolate.

Katie and Kyle are grass-root explorers, and they just happen to love cacao. Years ago, while touring New Zealand they stumbled upon a tiny cafe in Wellington, which opened up their minds to the complexity of specialty chocolate.
After deciding to build their own business, Katie and Kyle launched Soul Chocolate in Toronto, Ontario. Their chocolate highlights the origin of the cacao itself (where the farmers worked so hard to produce an amazing product) alongside the unique subtleties added from both roasting and refining. Each chocolate is truly unique.
They have also had the privilege of learning about cacao at origin, understanding not only how it is grown but who grows it. Their goal is to create 100% Direct Trade relationships for all of their cacao, offering far higher prices for the farmers incredibly hard work.
And heck, maybe one day they'll reach their ultimate goal - owning a beautiful barn in the countryside where they can roast cacao, pushing the craft of specialty chocolate even further.
So, as you can tell, its more than just the love of chocolate. Its the love for this world and the people who are on it, and being able to share something so complex and beautiful with anyone willing to sit down, hang out and listen... of course all of this happens while eating some tasty chocolate!
