Our seasonal dessert series is our creative outlet. It allows us to push the boundaries of chocolate and its use as an ingredient. When creating new desserts, we aim to use every single part of the ingredients we source.
We are offering a new dessert each month. This allows us to make the most of the seasonal produce we have available and to keep our creative juices flowing.
ABOUT THE DESSERT
Our fifth seasonal dessert highlights our
barrel aged dark chocolate. To make such an interesting chocolate, we roasted and aged our Dominican cacao nibs in a red wine barrel for 2 years, and then made it into chocolate. Over those two years, we rotated the barrel regularly and kept it moist to transfer as much flavour as possible.
The barrel aged chocolate reminds us of raspberry, marshmallow, and vanilla rooibos, and those flavours inspired this months dessert. It is paired with a crunchy chocolate graham cracker base, raspberry jelly centre, and a raspberry meringue.
